In 2001, we bought Alfred Schilling's chocolate factory on Market Street to house our catering and bakery operations. Our new space was so large we decided to open a modest storefront selling coffee, pastries and sandwiches. We quickly realized our good fortune and built on our initial concept by introducing self-service salad and hot bars and increasing our outdoor seating. Our bakery created new cakes, luscious desserts and chocolates like the ones we dreamt of from our favorite patisseries.
